LAMB SOUP
Ingredients:
- 150 gr lamb, cut in cubes
- 2 tbsp Ayma Olive Oil
- 1 carrot, grated
- parsley
- 1 tsp celery root
- 4-5 fresh green onions, chopped
- 6 tbsp rice, washed and drained
- 1 egg
- 3 tbsp yogurt
- 1/5 lemon juice
- salt (for taste)
Preparation:
Cook the lamb cubes, olive oil, celery root and green onions in a cooking pot. Add salt and cook until the lamb softens. Wash the rice and add into the filtered broth, cook until the rice is done. Whisk yogurt, egg and lemon juice in a small bowl, pour this mixture into the soup. Add lamb cubes and other ingredients, stirring.
TURKISH BOREK
Ingredients:
- 2 sheets of phyllo pastry (400 gr)
- 500 gr minced meat
- 1 small onion, sliced
- 2 green pepper, chopped
- 50 gr salami
- 200 gr mushroom, minced
- 1 tbsp Taris sunflower oil
- 1 tsp spices
- 2 eggs
- pepper, salt
Preparation:
1. Cook onion, peppers, salami and mushrooms until the peppers are softened. Add salt, pepper and spices.
2. Mix minced meat with eggs. Add all other ingredients.
3. If you have dough, divide in half.
4. Place one dough (or 1 sheets of phyllo pastry) in an oiled large pan, spread the cooked ingredients all over. Place the other sheet of phyllo pastry on top and make hole in center.
5. Brush the top of the pastry with egg yolk. Heat the oven to 220 °C and cook 40 – 45 minutes.
6. Cut into serving pieces and serve warm.
DRIED FIG DESSERT
Ingredients:
- Taris Dried Fig – 450 gr
- sour cream – 1 cup
- crushed walnut – 2 tbsp
Preparation:
Wash the dried fig, remove the coarsened part adjoining to a stalk, place to dessert plates, pour the sour cream and sprinkle walnuts.
BULGUR PILAF (Cracked Wheat Pilaf)
Ingredients:
- 2 cup bulgur (cracked wheat)
- 2 oninon, finely chopped
- 4 cups canned chicken broth
- 2 tomato
- 3 green peppers
- 3 Tbsp butter
- pepper, salt, to taste
Preparation:
Lightly wash the bulgur by shuffling it with your fingers. Then rinse out the cloudy water.
Cut onions and tomatoes into cubes. Heat the butter in saucepan, fry onions until soft, add bulgur, stirring constantly about 5 minutes with a wooden spoon. Add tomatoes and green peppers, continue to cook a little more, constantly stirring. Add salt and pepper (to taste).
Stir in broth and bring to a boil. Reduce heat to simmer, cover and cook until bulgur is tender.
Serve warm.
TURKISH DESSERT WITH MILK
Ingredients:
- 1 egg
- 12 Tbsp sugar
- 6 Tbsp semolina
- 1 tsp vanilla sugar
- 5 cup milk
- 100gr Tama margarine
- 200gr Cookie
- nuts for taste
Preparation:
1. Break the egg into the pan, mix it with sugar, add semolina and vanilla sugar, put on fire and pour in milk. Cook 10 minutes, stirring constantly to prevent lumps, cook until do not boil. Then add Tama margarine, stirring until completely melted.
2. To easily get the dessert from a plate, rinse it with cold water. Then pour half of mixture on it and put a layer of biscuits. Pour the rest of mixture as a next layer. Then take a few biscuits and nuts for taste and put them in a blender for grinding.
3. Sprinkle chopped nuts and biscuits on the top of dessert. Also you can put bananas, strawberries or other fruits which you have on top. Place the dessert inside fridge and leave for 4 hour.
